Originally from Sicily, granita is an ice-y treat made from sugar, fruit juices and/or other flavourings. The ice is softer than a snow cone but not quite as soft as a slushy, it's just right. There are the traditional flavours such as lemon and strawberry, but I wanted to take it up a notch and make some summer cocktail favourites into this refreshing Italian delight.
The below portions are for one serving/person, so you would just multiply them by however many people you are hosting. Once you blend all the ingredients together, you pour the liquid into a shallow pan and place it in the freezer. Depending on how much liquid you made or how deep the pan is, the longer it takes to freeze. When the liquid turns into a really wet slightly frozen slush, you run a fork through it to break up the ice. Repeat this "forking" step every 30-minutes for approximately 4 hours. This is a super easy, light and refreshing dessert that is perfect for ending a backyard meal.
Watermelon Lemonade made with Limoncello
1 cup blended watermelon juice
1 1/2 shots of Limoncello - You can taste the alcohol just enough with this portion, but you can add more/less to your liking.
Mojito
1 cup carbonated water
1 1/2 shots of white rum - I used Bacardi
2 tsps granulated sugar
Lime juice from one lime - About 1/4 cup
Add mint to your liking
